More Key Details

This version of the recipe incorporates fresh spinach directly into the crepe batter, resulting in beautiful green crepes that are as nutritious as they are striking. The key to a smooth, vibrant batter is blending it thoroughly until completely smooth. The rest of the process remains a joyful assembly of savory, umami-rich components.

Let`s start with the process

1. Prepare the Cashew Cream Cheese (Do this first or the night before)

  • Place the raw cashews in a heatproof bowl and cover with boiling water. Let them soak for at least 20 minutes (or overnight in cool water for an ultra-creamy result)

  • Drain and rinse the cashews. In a high-speed blender, combine the soaked cashews, plant-based milk, lemon juice, nutritional yeast, and salt.

  • Blend on high until completely smooth and creamy. Transfer to a bowl and stir in the fresh chives. Set aside or refrigerate until ready to use.

2. Roast the Cherry Tomatoes

  • Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and pepper on a small baking sheet.

  • Roast for 15-20 minutes, or until the tomatoes have burst and started to caramelize.

3. Make the Spinach Crepe Batter

  • In a blender, combine the plant-based milk, fresh spinach, flour, melted vegan butter/oil, and salt.

  • Blend on high until the mixture is completely smooth and vibrant green. Let the batter rest for 10-15 minutes to allow the gluten to relax, which results in more tender crepes.

4. Cook the Crepes

  • Heat a non-stick crepe pan or skillet (around 8-10 inches) over medium heat. Lightly grease with a little vegan butter or oil.

  • Pour about 1/4 to 1/3 cup of the green batter into the center of the pan, immediately tilting and swirling the pan to spread the batter into a thin, even circle. Cook for 1-2 minutes, until the edges lift and the bottom is lightly golden.
  • Flip carefully and cook for another minute on the other side. Stack cooked crepes on a plate and cover with a towel to keep warm.

5. Sauté the Mushroom Filling

  • In a large skillet, heat the olive oil over medium-high heat. Add the sliced mushrooms and a pinch of salt.

  • Cook, without stirring too much, for 5-7 minutes until they release their water and develop a deep brown color.
  • Add the minced garlic and cook for another minute until fragrant. Season with black pepper and fresh thyme. Remove from heat.

6. Sauté the Mushroom Filling Assemble and Serve

  • Lay a green spinach crepe flat on a plate. Spread a generous spoonful of the cashew cream cheese down the center.
  • Top with a portion of the sautéed mushrooms. Fold the two sides of the crepe over the filling. Serve immediately with a side of roasted cherry tomatoes, a drizzle of balsamic glaze, and an extra sprinkle of fresh chives.

Ingredients

 For the Cashew Cream Cheese:

  • 1 cup raw cashews, soaked
  • 1/4 cup unsweetened plant-based milk (oat or almond work well)

  • 1 tbsp fresh lemon juice

  • 1 tbsp nutritional yeast

  • 1/4 tsp salt

  • 2 tbsp fresh chives, finely chopped

For the Roasted Tomatoes

  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • Salt and pepper to taste

For the Crepes:

  • 1 cup all-purpose flour
  • 1/4 tsp salt

  • 1/8 tsp turmeric (optional, for color)

  • 1 1/4 cups plant-based milk

  • 1/4 cup water

  • 2 tbsp vegan butter or neutral oil, melted, plus more for cooking

  • 1 tsp fresh thyme leaves (or 1/4 tsp dried)

  • Salt and black pepper to taste

More Key Details

This dish is a fantastic introduction to Thai cuisine, offering complex flavors without being overly spicy. The ingredients, like Massaman curry paste and tamarind paste, are now widely available in well-stocked supermarkets or Asian grocery stores.

It’s a highly nutritious meal, providing healthy fats from coconut milk and a good source of carbohydrates and energy from the potatoes and peanuts. The protein from the chickpeas or tofu makes it a filling and balanced dish.

This curry is incredibly versatile—serve it over jasmine rice, brown rice, or even with noodles for a different twist. It’s a healthier homemade alternative to takeout, allowing you to control the quality of ingredients and the level of spice and sweetness.

Preparing this meal is a straightforward process of simmering, making it perfect for a relaxing cooking experience. The leftovers are a prized possession, as the flavors meld and intensify overnight.

Let`s start with the process

1. Sauté the Aromatics

  • Heat the coconut oil in a large pot or Dutch oven over medium heat.

  • Add the Massaman curry paste and cook for 1-2 minutes, stirring constantly, until fragrant.

2. Simmer the Curry

  • Pour in the coconut milk and vegetable broth, stirring to combine with the paste.

  • Add the diced potatoes, onion, and carrots. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the potatoes are fork-tender.

3. Add Remaining Ingredients

  • Stir in the chickpeas (or tofu), peanut butter, tamarind paste, soy sauce, and maple syrup.
Simmer uncovered for another 10 minutes to allow the flavors to meld and the sauce to thicken slightly.

4. Final Adjustment

  • Taste and adjust seasoning. Add more soy sauce for saltiness, maple syrup for sweetness, or a pinch of cayenne for more heat.
If the curry is too thick, add a splash of vegetable broth or water to reach your desired consistency.

5. Combine & Serve

  • Ladle the hot curry into bowls over steamed jasmine rice. Garnish generously with roasted peanuts, fresh cilantro, and a squeeze of lime juice.
